Crockpot Rice Pudding
6 cups milk
1 cup rice
1sp vanilla
3/4 cup sweetener
2 cinnemon sticks
nutmeg for garnish
raisins (optional)
Put first five ingreedients in crockpot on low for about six hours.  You can add raisins at the beginning if you want – but they will rehydrate and swell up.  I prefer to add them toward the end so they don’t [...]

grumpy

Friday, December 19th, 2008

I don’t know why I’m grumpy, I really shouldn’t be!  Today Ellie had her 3 year old well child visit and it went great!  She’s recently gone through a growth spurt and she’s now at the 50th percentile for height, and just over the 50th for weight, too.  Her hearing and vision are great, and [...]

obey the urge

Monday, December 15th, 2008

I don’t get the urge to clean my car often enough.  At all.  Plus I have two kids who drag toys and snacks out to the car all the time and spill and make messes and I don’t pick up after them enough.  And, I always keep some extra jackets and coats and pillows in [...]

obession of the week, #2

Bread Pudding!  Tonight I made Dark Chocolate Coconut Bread Pudding to take to a church dinner.  I used my Eggnog Bread Pudding recipe, except I didn’t use the sauce, added 1/3 MORE cup splenda to the egg mixture, instead of the spices I used dark cocoa powder (about 1/3 cup), and I put 2/3 cup [...]
