Blueberry Ice Cream
Killy’s been begging to make ice cream the last couple days so we made some using our fresh picked blueberries. I LOOOOOOVED it and ate way too much, the kids liked it okay, and David said it was “too creamy.” Oh, well. Here’s the recipe:
Blueberry Ice Cream
2 cups blueberries
1 cup sugar
1 cup whipping cream
1 cup half and half
1 egg yolk
Simmer blueberries in just a bit of water and 1/2 cup of the sugar till they are all mushy and liquid-y. Remove from stove. Then, simmer 1/2 cup of the half and half with the egg yolk and the rest of the sugar until its thickened a bit. Mix in the rest of the half and half and the cream, then mix with the blueberries. Cool in fridge. Pour into ice cream maker and follow the maker’s directions.

Well, I’ve had a frustrating day and I think the solution is to take a very hot bath and go to bed and try to sleep for about 9 hours straight. Surely that will help me feel better, right? Tomorrow I won’t be so stressed about Ellie’s non-potty-learning, I won’t feel totally unwanted by everyone I love, I won’t be convinced that I’m lazy and fat because I only worked out for an hour and a half today, and a few toys on the floor won’t bother me so much. I think I definitely need to go on to bed!
