Chickpea Peanut Stew

This was wonderful!  I found a recipe online, but altered it quite a bit and this is what I came up with:
1 onion, diced
4 cloves garlic, crushed
2 tbsp butter
1 bag frozen stir-fry onions and peppers
1 can chickpeas, drained and rinsed
1 cup prepared bullion (chicken or veggie)
1/4 – 1/2 cup smooth peanut butter
curry powder, to taste

Today was Killy’s last day of school!  He’s had such a wonderful year and he has learned so much.  The kids did some performances at school today and then we had a potluck lunch.  And then Miss Carina had to leave to go home (sniff, sniff).  Here’s Killy “graduating:”
