Amish Friendship Bread

I decided to feed and use the starter Carina gave me, and found a recipe for Amish Friendship Bread… of course I healthy-ed it up a bit, and here’s what I came up with:

INGREDIENTS

  • 1 cup starter
  • 2/3 cup vegetable oil (omega-3 enriched)
  • 3 eggs (omega-3 enriched)
  • 2 cups whole wheat flour
  • 1 cup white sugar/splenda (mostly splenda)
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract

Mix all and bake at 350 in two loaf pans.  Its in the oven now – I hope it turns out good!  I meant to chop up an apple into it, but the kids came and “helped” me and got me all distracted.

It should be a fun day – Uncle Bob is in town!  After the kids were in bed last night I went over to my parents house and hung out with them all for a couple hours.  Today I’m planning on taking the kids with me into town to run a couple errands, and then we’ll go over and hang out with family some more.  I’m thinking I’ll be able to get in a run on the mountain behind my dad’s house sans children!
