I’ve met my monthly goal again!

Next year I’ll have to up my exercise goal some more!! I’ve actually gained about five pounds over the summer, but I keep trying to calm myself by reminding myself that it’s probably just muscle. Adding in cycling every week and working with weights more makes that reasonable, as does the fact that all my clothes still fit fine. But, it still sucks to be working out all the time and eating healthy and see the numbers on the scale creep up!
Speaking of eating healthy, I’ve been on an Asian food kick lately. For lunch most days I make some kind of Asian noodle dish. Noodles with some kind of veggie (usually kale or broccoli), sesame and/or peanut type sauce, and toasted sesame seeds sprinkled on top. I went to an Asian grocery store in Roanoke earlier this week, and it was NASTY! There were a couple of Asian markets I went to often in Kansas City, and they were very nice. But this place smelled unbearable and was filthy. I did buy the Ginger Drink David likes so much, some chopsticks, dried fruit, and dried noodles… but there’s no way I would have bought any of the meat they had there, and a lot of the jarred food looked really, really old. (Is peanut sauce ever supposed to be black? I’m thinking not.) We have stir-fry for dinner a lot, too.
Today I baked three Chocolate Zucchini Cakes, I’ll freeze two of them and we’ll eat the third over the weekend. I still have about three cups of shredded zucchini, so I think I’ll be making muffins soon, too. David’s been on a snickerdoodle kick and has baked batches twice this week – yum! Tonight I’m making BFD (breakfast for dinner) – scrambled eggs, toast with lots of my homemade strawberry jelly, watermelon, and maybe cheddar grits. I think I need to run into town, though, because we’re out of butter, coffee, and milk.
