So, last week’s “hike” fizzled after only 11 minutes, but this week went much better!  We went hiking on the New River Trail in Galax, and I think we did about 3-4 miles in an hour and 15 minutes.  Killy even walked the first 35 minutes by himself!

Banana muffins seem to elicit one of two responses from people: total excitement or total revulsion. Personally, I enjoy fresh banana muffins spread with butter and/or honey. This recipe makes the moistest, richest banana muffins I’ve ever had:
4 overripe bananas
1 stick butter
3/4 cup sugar or Baking Splenda
2 eggs (I always use omega-3 enriched)
