fun times…
I’ve had a nice last few days. My kids continue to grow unbelievably cuter by the moment! Don’t believe me? Check it out:

I haven’t updated in a few days… so what have I acomplished? I mowed our yard for starters! On Wednesday I mowed the entire yard, which is somewhere around 1.5 acres (we own 2 acres, but some of it is wooded). I was soooo exhausted that night! Thursday we went to playgroup and had a nice time and Grandmommy came to visit – the kids loved popping red popcorn with her. And today we took a picnic lunch up to Rocky Knob and did an easy hike (just the kids and I while David worked, Killy hiked and Ellie rode in the Ergo) and this afternoon we did some shopping in Christiansburg and then went to the free outdoor concert at Tech and enjoyed a picnic dinner. That’s right – two picnics in one day! For lunch I packed wraps (natural peanut butter, sugar-free fruit spread, and wheat germ on whole wheat tortillas), whole grain goldfish crackers, no sugar added applesauce, and bananas. I thought that made a pretty healthy and fun picnic, and the kids enjoyed it. For dinner I went a little fancier: little sausages, crackers, lobster pate, I had a mix to make a Moroccan quinoa and fruit salad (it was pretty good, but I think I could make a better one myself), I made chicken nuggets to enjoy with honey mustard and/or bbq sauce, and Killy and I made banana mini-muffins. Oh, and I packed Italian ice and lite ice cream sandwhiches for dessert. It was all tasty! David especially loved the chicken – all I did was cut up boneless, skinless chicken breasts and tossed in a bag with 1/2 cup italian style breadcrumbs and 1/2 cup wheat germ, then baked on pam-sprayed cookie sheet for about 8 minutes on each side at 400 degrees. Very easy, very healthy, and better than chicken nuggets you’d get frozen or from a fast food place.
Tomorrow we’re heading to Galax and Erin and David and I are going to watch 1408 at the movie theater (actually, after we leave the kids in Galax we’ll drive to Mt. Airy to see it), and on Sunday I think David and I are going to take the kids to church in Roanoke, get some Indian food for lunch, and then hike Peaks of Otter. Yay!

You know, as soon as I saw the picture of Killy with the tree (before I scrolled down), I thought “Mommy’s little tree hugger.” It’s good to know we’re still totally on the same wavelength. Also, what on earth was Ellie laughing at so much when you were having your picnic? I loved the pictures!
