We had such a wonderful time with mom and dad here!  The whole week was wonderful… here are some highlights:
-We played in the backyard A LOT!

Stir Fried Peanut Butter Chicken
1 c. light coconut milk
1/4 c. crunchy peanut butter
1 tbsp. Chinese chili puree
1 tbsp. lemon juice
1 tsp. minced garlic
1 tsp. minced ginger
1 1/2 lb. boneless chicken (sliced in 1/4 inch strips)
1/2 onion, chopped
1 red pepper, sliced into strips
